This is a pretty basic recipe that I spruced up. Like I always do, I took inspiration from what I already had on hand. True to my cooking style - improvisational. 

I used this recipe then added cinnamon, nutmeg, & chopped walnuts and transformed it into muffins. Hope you enjoy my version of this recipe!

Muffins

Here's what you'll need:


1 large beaten egg

1/2 cup light brown sugar, packed

1/4 cup granulated sugar

1/4 cup canola oil, veggie works too!

1/4 cup cup sour cream

2 teaspoons vanilla extract

1 cup mashed ripe bananas, about 2 large bananas

1 cup all-purpose flour

1/2  teaspoon baking powder

1/2  teaspoon baking soda

1/3 cup chopped walnuts, I think them chopped on the smaller side. Not fine though!

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

pinch salt

Preheat the oven to 350F. Grease and flour a muffin pan. 

Mix all the dry ingredients in a large bowl. Then in a smaller bowl mix the wet ingredients, then add to dry mix bowl and mix. Add the mashed banana and nuts; fold in. 

Evenly spoon batter into muffin tin. Bake off here or set aside to make the cream cheese filling. If you choose to skip the filling and bake them from here, bake for about 10-15 minutes until a toothpick comes out clean. But I wouldn't suggest skipping the best part!

Cream Cheese Filling

Here's what you'll need:

1 large beaten egg

4 ounces softened cream cheese

1/4 cup granulated sugar

3 tablespoons all purpose flour

1 teaspoon of vanilla

Whole half walnuts: Optional

Combine all the ingredients in a small bowl using a hand mixer. Then evenly spoon dollop into the top of each muffin. Optional: Place a half walnut on each unbaked muffin. It look pretty and adds more crunch! 

Bake for 15-18 minutes. Using the toothpick test here will be challenging because it won't really come out totally clean because of the cream cheese. Try to test it at an angle to avoid the gooey, delicious filling. 

Let cool for 5-10 mins. Then gently run a plastic knife around edges, then pop out and enjoy now or later!
